Summer is officially over in South Africa but that doesn’t mean you can’t still enjoy the end of season produce. Mangoes are a summer fruit and are at their best in December/ January. I am always looking for different and healthy ways to enjoy breakfast. I had a couple of over ripe mangoes in my fruit bowl and decided to use them for this delicious recipe. Over ripe mangoes are best for my mango chia seed pudding recipe.
250ml milk of choice (I chose Almond Breeze Almond milk)
2 tbsp chia seeds
1 tsp honey
¼ tsp cinnamon
½ tsp vanilla essence
1 big mango or 2 small mangoes
This recipe is enough for two portions, or one really generous portion.
1. Combine the milk, chia seeds, honey, cinnamon and vanilla essence in a small bowl and mix.
2. Cover with plastic film and place in the fridge overnight.
3. Before serving, slice and peel one mango and pulse in blender.
4. Add the blended mango to the chia seed pudding and mix until well combined.
Mango chia seed pudding can be served as a healthy gluten and sugar free breakfast or even a guilt free dessert.
